1 cup ricotta cheese
- 2 Tbsp honey
- 6 slices of banana bread
1. In a small bowl, stir ricotta cheese with honey.2. Spread mixture on 6 slices of banana bread; top with banana slices.
3. Form into sandwiches; cut in half.
You can substitute low-fat cream cheese for the sweetened ricotta.

I think these would be really cute finger sandwiches. For a brunch of something. I’ll bet they’re really good but very banana-ie. You would have to really like them and I do.
Something about the ricotta and banana, I’m not too sure about! I’d try them, though. I’ll try most things. I love banana bread.
