Balsamic Chicken Kabobs (yes, we grill year-round, even when it’s snowing!) – 4 servings, 50 min prep/cook time
1lb cubed chicken breast
12 cherry tomatoes
12 onion cubes or boiling onions
1 package baby portabella mushrooms
5 oz balsamic vinaigrette – divided 4/1
skewers
In glass bowl mix chicken cubes with 4oz of vinaigrette. Pop in the fridge for 30 minutes. Divide all items (including chicken) onto the skewers, then grill – 8 minutes first side, turn, and grill for 5 minutes. Baste with the remaining 1oz of vinaigrette. Can be served with rice or cous cous, or all alone.
This looks really good Goddess. We grill year round too. Even when we have to scrape the snow off the grill. We haven’t had kabobs in ages. Great idea. Thanks.
Minus the mushrooms~looks yummy. We grill all year round too and love grilling kabobs. I had to buy the metal ones though b/c I never soaked the wood skewers long enough so they always burned!!! Thanks for the new recipe.
This is a very good recipe, I have tried it before. It is also good using pork.
I have made the executive decision that once I have my own place (soon I swear it) I shall take each of these recipe’s and cook it. Naturally I will first install fire alarm and all fire things!

Sounds delicious! We have the kabob skewers, but hardly ever use them. I’ll have to dig them out!
These do sound really good. We cook on our grill too all winter. I don’t know what we’d do without it. Kabobs are also fun for kids to make. You can put on what you want. Thanks for this. I like these idea’s that real people make and not just seeing or getting them from a book.
