Let’s share some summer recipes

tuna saladIt’s been bantered about on some of our blogs about what kinds of things we eat in the summer.  We did this recipe exchange last winter so I thought maybe we should try it again now with different things we eat in the summer months.  I do think we all tend to eat a lot “lighter” in the summer.

If you want to take part in this, send me your recipe and pic if you have it.  Otherwise I’ll just try and find one that looks like what you’re talking about.  

I also think we should all send in our potato salad recipe. Javajunkee and Gary are having a neat little “thing” going on.  His is “yellow” and hers is “white” and she wants him locked up for making his yellow.  Sorry jj, mine’s yellow too!!!!!  So send them in and lets see who eats what.

I’ll go first.  This Tuna Salad is something that Paul, Toby and I just love and I do make it quite a bit.  This picture is NOT mine though. I was to lazy to make it today and I wanted to start this off.  Also, keep in mind that I’ve been making this for 40 years and never measure anything but I’ll try to guess as best I can.

I use the Creametter “rings” pasta.  1 small box.  Cook and cool.

5 or 6 small cans of tune, drained.  I’ve also used chicken for this every once in a while.

1 small onion, finely chopped.

2 stalks celery cut up small.

1/2 cup peas.  I use frozen.

I use Miracle Whip and put enough in to lightly cover and stir.  Keep adding Miracle Whip until is as moist as you like it.   Cool for as many hours as you can.  I find this much better if you make it a day ahead of time.

We also really like this on a piece of toast or bun.  Put on a slice of tomato, add salad on top of tomato and you’re ready to go.

    I can’t eat tuna..I just cant’ do it. As yummy as that looks I couldn’t eat it. 😦

    I will post my potato salad recipe. Honestly though I don’t have special recipes for summer. What I do is grill. And no big secrets there but what I have found is that you can grill almost anything which sure beats heating up the kitchen.

    sweet potatoes are so good and acorn squash too on the grill. I peel sweet potatoes and poke a couple holes in them and then brush them lightly with butter..wrap in foil and put on a medium/high heat grill. I go out and turn them every once in awhile. Same thing with acorn squash.
    I peel and quarter them in chunks…put a small amount of water in an aluminum pan…cover and then put on the grill rack of medium heat grill and just watch. When they are done I drain off the water…put them back in the pan with some butter and brown sugar/covered …back on the grill until it’s all melted. YUM!!!

    Sweet corn I husk ..spread with butter, wrap in foil and on the grill it goes…rotate every once in awhile.

    I will try and grill almost anything at least once.

    YEAH!!! Great Idea, I will put on my thinking cap and think of something to share. I am looking forward to this. And a potato salad challenge. LOL My first thought is the world is big enough for a white and a yellow! But I will try both! ;+) It’s so good to have Summer Recipes, Wow Summer I can’t believe I just said that, really is it on it’s way? It’s gray and rainy out here but I know the sun will eventually come back. I will get you my recipe and picture Joy. Yum Summer Food!!!

    Hmmm why haven’t I tried this yet????? Looks delish and I LOVE tuna!!!!! I have a couple different ways I make potato salad, sometimes I use ranch dressing and bacon!! I don’t have recipes though, I just throw in whatever looks good. I very rarely put eggs in mine though.

      It’s hard for me to write down what I make too. I usually throw a bunch of “whatever” together but a lot of people want idea’s so I want to try. We do eat a lot of salads because we grill out so much and don’t like to heat up the house. Salads I can do in the mornings or late evenings and don’t heat up the house.

      I have 3 recipes already. Thanks folks. This should be fun.

    I to just through salads together.Lots of eggs in my potatoe salad,thats the way my Momma did it.
    Taco salad is a fav too,I actually am making it today .I made one on sat. for a do we had and we are craving again….crazy uh?I grill so much so I make alot of salads.Look forward to seeing everyones recipes.Hope someone has a good pasta salad,I love mine but time for a change.
    Oh,yours looks good Joy,think I will try it with chicken.

      Sounds good JAM. You have excellent recipes. Depending on how many I get, I’ll do one a day. If I only get a few, I’ll spread them out.

    I make a good potato salad. As a matter of fact I sort of wish I didn’t. Every time I am invited somewhere I am asked to bring it and I hate peeling potatoes. I make 5 pounds of it and my son-in-law hoards it. Other than that I don’t really have any good summer recipes so I’ll be looking for some here.

    Hey Javajunkee…its a simple recipe.Lettuce,browned hamburger w/taco seasoning mix,tomato,cheddar cheese,crushed taco chips green onion and Catalina dressing.All those amounts to your own taste.
    Love to have yours.
    Sorry Joy,am I suppose to send this to you first?LOL.Its not much of a recipe anyhow….just a throw together.

    Hells to the yeah! This sounds FABU! Again, my daughter will eat it- being a vegetarian that will eat fish or sea food. Yumma! I’ll have to think of one of my recipes to share!
