It’s been bantered about on some of our blogs about what kinds of things we eat in the summer. We did this recipe exchange last winter so I thought maybe we should try it again now with different things we eat in the summer months. I do think we all tend to eat a lot “lighter” in the summer.
If you want to take part in this, send me your recipe and pic if you have it. Otherwise I’ll just try and find one that looks like what you’re talking about.
I also think we should all send in our potato salad recipe. Javajunkee and Gary are having a neat little “thing” going on. His is “yellow” and hers is “white” and she wants him locked up for making his yellow. Sorry jj, mine’s yellow too!!!!! So send them in and lets see who eats what.
I’ll go first. This Tuna Salad is something that Paul, Toby and I just love and I do make it quite a bit. This picture is NOT mine though. I was to lazy to make it today and I wanted to start this off. Also, keep in mind that I’ve been making this for 40 years and never measure anything but I’ll try to guess as best I can.
I use the Creametter “rings” pasta. 1 small box. Cook and cool.
5 or 6 small cans of tune, drained. I’ve also used chicken for this every once in a while.
1 small onion, finely chopped.
2 stalks celery cut up small.
1/2 cup peas. I use frozen.
I use Miracle Whip and put enough in to lightly cover and stir. Keep adding Miracle Whip until is as moist as you like it. Cool for as many hours as you can. I find this much better if you make it a day ahead of time.
We also really like this on a piece of toast or bun. Put on a slice of tomato, add salad on top of tomato and you’re ready to go.
