*YUM*

1 medium sweet onion, sliced thin and separated into rings
1 cup white vinegar
1 cup water
1/4 cup sugar, or more or less to taste (sometimes I don’t use or just sprinkle sugar)

The cucumbers may be scored or part of the skin can be peeled for better absorption of the juice. ( I peel them all the way)
Layer cucumbers with the onion in a large bowl. In a separate bowl, mix remaining ingredients, stirring until sugar has dissolved.

Taste and adjust sugar for sweetness, adding more sugar, if needed. Pour over vegetables and toss lightly.
Cover and chill for 2-4 hours before serving.
the final product will look a little different ..hard to find images to match what you are making unless you take them yourself.
mine basically is a clear liquid on the cucumbers and onions ..my mom when she made them would put them in a huge mason jar and then shake it every once in awhile…like day 3 was the best…if they lasted that long.
My wife makes something very very similar to this and it’s VERY tasty!!! 😀
I make the same thing minus the onions. I also make mine clear. My mother-in-law makes them white by adding mayo which in my opinion is just wrong for this recipe!
kind of like mustard and dill pickles are wrong in tator salad 😉
Now that looks and sounds so nice and light and DELICIOUS! I do a similar thing with tomatoes.
This would be really good with tomatoes. The possibilities with this is endless. Olives too???

This is definitely a German dish that my family in Manitoba has made as long as I can remember, with a little variation.
I add tomatoe to mine, drain the vinigar and salt after 15 min and stir in some sour cream and a little mayo. I love it with boiled potatoes. It is best made from fresh cucs and tomatoes right from the vine.
