Shrimp Veggie Pasta Salad from Just A Mom

Here’s one from Just A Mom from over at Life Is Funny Wearing Purple Colored Glasses.

pasta salad8 ounces cooked tricolor spiral pasta, rinsed
1 pound small shrimp, boiled, peeled and deveined
3 small tomatoes, chopped
1 cup chopped onions
1 cup chopped celery
1 small red bell pepper, chopped
1 small green bell pepper, chopped
1 small cucumber, chopped 
1 cup carrots, chopped 
1 small bottle of your favorite Italian Dressing
1 teaspoon salt
1/8 teaspoon pepper
In a large bowl, combine all ingredients. Cover and refrigerate for at least 2 hours before serving. (I like to make this a day ahead of time)

    I made pasta salad tonight, pretty much like this minus the shrimp- I’ll bet the shrimp would be fantastic! I usually marinate chicken breast in the Italian dressing and grill it, cut it into small bite sizes and add to my pasta salad. Never thought to add shrimp before but I’m going to try it.

    My daughter is a vegetarian but will eat sea food so this would be good for her too- which will be nice for a change!

    My oldest daughter and I throw in black olives as well. I love this recipe because you can pretty much put in what you like.
