Asparagus Chicken Salad

asparagus and chicken salad

I haven’t made this salad for a while but it’s very good.  What I love the most about it is the dressing. It’s good on so many other things.  I do make that very often.

Dressing:

1/2 Cup mayonnaise

1/2 Cup sour cream

6 or so green onions chopped

1 TBS Lemon juice

Salt and pepper to taste

Salad:

Mixed salad greens. 

2 Cups cooked chicken (I cut mine into cubes or bite size pieces)

Cherry tomatoes halved. As many as you like.

Asparagus cooked and sliced, as much as you have or want (I keep mine in kind of long pieces).

 

Mix dressing ingredients in bowl and refrigerate. At least 30 minutes but I try and do this the day before I want it.

In large salad bowl, combine greens, chicken and tomatoes. Arrange salad mixture on salad plates and top with asparagus. Spoon dressing over each salad.

    I have never eaten asparagus! The dressing does sound delicious though!

      I think you would love asparagus Nikki. You love most things. It’s delicious. It’s got to be fresh though. Don’t even think of buying a can of it or even frozen. It’s horrible that way. Canned is mushy and frozen is hard. They have not perfected asparagus to eat like this yet. Fresh, fresh, fresh. Next time we get together, I’ll have it.

      This dressing is very good and I’ve used it for dressing on just dinner salads. Don’t laugh but I love this dressing on a ham sandwich.
