STRAWBERRY-RHUBARB CAKE from javajunkee
1 yellow cake mix
4 c. diced rhubarb
3 oz. box strawberry Jello
1 c. sugar
Mix cake mix according to directions on package. Cover bottom of a 9×13 inch pan with rhubarb. Sprinkle Jello over rhubarb. Sprinkle sugar over Jello. Pour cake batter over this. Bake 30-35 minutes. Serve with whipped cream, Cool Whip or ice cream.
that’s it. You don’t even have to cook the rhubarb first..this is like one of the easiest cakes to make and YUMMY!
I have never had rhubarb.. What is it like? The texture? I’m kinda funny about textures.. It sounds interesting but hmm.. i wonder..
Texture wise Tosha, I’d guess and say it’s like celery. It tasted NOTHING like celery though and if it cooks up, it wouldn’t be like that cooked.
I made this cake and it is really yummy!!! It’s a great way to use rhubarb and it’s easy to make.
