what you need

1 lb. ground beef
1/2 cup  finely chopped onions
1 egg
12   PREMIUM Saltine Crackers, finely crushed (1/2 cup)
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese, divided
1 cup  TACO BELL® HOME ORIGINALS® Thick ‘N Chunky Salsa, divided

HEAT oven to 400ºF.

MIX first 4 ingredients with 1 cup cheese and 1/2 cup salsa.

PRESS evenly into 12 muffin cups sprayed with cooking spray. Use back of spoon to make indentation in center of each. Place muffin pan on foil-covered baking sheet.

BAKE 20 to 25 min. or until meatloaves are done (160°F). Top with remaining salsa and cheese; bake 3 min. or until cheese is melted.

    They were very good and very easy to make. I had all the ingredients on hand which made it even better. I notice the nutrition info doesn’t say what a serving size is so I’ll try and find out.

      Just a guess… the serving size is probably “per cupcake” – since they’re made in cupcake pans. So, maybe 3/4 cup(ish)?

      I love the idea that kids each get their own. They think that’s neat when they do. I asked Christopher about these and he smiled and said they were good and he got his own. When I make these I’m going to use a pot pie size. That will be perfect for us. I’m afraid “someone” who lives here would walk by and think they’d be a good “snack” to pop in his mouth. I’m going to have these this week.

    I’m going to have to try this one. I love making flavored meatloaf. I get bored with plain ol’ “meatloaf flavored” meatloaf.

    I really like the idea of using the muffin cups. We started doing that a while back when I bought Rachel Ray’s cookbook for kids. She’s got a Meatloaf Cupcake recipe in there that I did with Josh, and he thought it was just so cool that we did them in cupcake pans! It’s kind of a kick, really. Gets away from the boring old loaf.

    I plan on making these the next time I plan meatloaf for supper. I will have to leave the salsa out of some of them though…I know Jason won’t like that. But that’s easy enough, I don’t mind.
