Berry Fresh Brick Salad

I made this for myself earlier this week. It was really yummy!!! I found it on the Wisconsin Cheese site, and if you click through, you’ll find a printable there.

Berry Fresh Brick Salad

Servings: 4 to 6 Ingredients:1/3 cup balsamic vinegar
3 tablespoons pomegranate juice
2 tablespoons honey
1 clove garlic, minced
1/2 teaspoon ground black pepper
1 tablespoon olive oil
4 cups mixed baby or chopped greens
2 cups fresh strawberries, sliced
1 4.4-ounce container fresh blueberries
1/4 cup (1 ounce) Wisconsin Brick Cheese, cut in small cubes (about 1/2 inch)
1/4 cup (1 ounce) Wisconsin String Cheese, cut into small cubes (about 1/2 inch)
1/3 cup walnut pieces

Cooking Directions:

Whisk together first 5 ingredients in a small bowl. Slowly add oil, whisking to combine; set aside.

In large bowl, combine mixed greens and remaining ingredients. Add dressing, tossing well.

    I made the dressing in a covered jar and refrigerated it, because I’m not much of a “dressing girl” – I only put a tiny bit on salads. So for the last couple of days, I’ve made this salad and drizzled some on. It’s lasted me nearly a week. The salad is a nice mix of savory and sweet, with just a bit of crunch thrown in from the nuts. I really like it.
