I have no idea what to call this. I made it for a Potluck recently, and got the recipe from a friend on Facebook. It turned out really pretty and yummy. (amounts are approximate)
- 1 box bowtie pasta, uncooked
- 1 pkg grape tomatoes
- 6 oz. bag broccoli crowns (part of a small head)
- 1 small jar capers (or chopped olives)
- 1 pkg imitation crab
- 1 c shaved parmesan cheese
- 1 c Italian (vinegar/oil style) Salad Dressing
Boil pasta. While pasta is working, halve tomatoes, put into large serving bowl that you will use. Further cut broccoli crowns into manageable sizes, add to tomatoes. Drain capers, dump into bowl. Cut crab into bite-sized chunks, and into bowl.
By this time, the pasta should be about al-dente, drain and rinse with really cold water. Drain well, and dump on top of veggies. Mix to combine, and douse with Italian Dressing (you may have to use more… let it sit and see just before serving). Add Parmesan Cheese.
It can be served immediately, or allowed to sit and stew in it’s juices to allow flavors to combine.
I’ve already printed this out. I can’t wait to make it. With wheat pasta and fat free Italian dressing, it’s almost good for you.
I even had it for breakfast!!! YUM!!
Oh, and for those who don’t like the fake crab, I’ll bet shrimp would be just as good.
AND, if you’re not into the seafood side of it, I’m told that if you substitute chunks of string cheese for the crab, it’s still a crowd pleaser.
I love pasta salads, especially with Italian dressing. This sounds so good, and it’s making me hungry! I can’t wait to eat real food.
