Do you think a mattress affects the way you sleep? I do. Before I got my new mattress, I hadn’t slept good in years and it really did affect the way I slept and the way I felt when I woke up from such a good sleep. I had no idea what I’d been missing.
I have a queen size Select Comfort and I’d never have any other kind of bed. I LOVE my bed.

Well, the news came out yesterday… Lance Armstrong has finally quit something. After 13 years of trying to prove his innocence, he has given up the fight against the US Anti-Doping Agency and refused to go to arbitration. The USADA says they will now strip him of his seven Tour de France wins and his Olympic Gold Medals, and ban him for life from the sport of Bicycle Racing.
The Olympic Committee was quick to retort with, “show us the proof,” and the gold-medal-stripping has been dropped from the news stories. Nike, Anheuser-Busch, and Oakley have expressed their ongoing support for Armstrong.
What about you? Do you think Armstrong is guilty? Did you think that before he dropped out of the battle? Or were you with him until he quit, and now feel that if he won’t defend himself, that means he’s guilty?
- 2 medium potatoes, sliced
- 3 tablespoons water
- 2 bacon strips, diced
- 1 small onion, thinly sliced
- 4 ounces process cheese (Velveeta), cubed
- 3 tablespoons butter, cubed
- Place potatoes and water in a microwave-safe bowl. Cover and microwave on high for 2-3 minutes or until almost tender. Meanwhile, in a small skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain.
- Drain potatoes. On a double thickness of greased heavy-duty foil (about 18 in. square), layer half of the potatoes, bacon, onion, cheese and butter. Repeat layers.
- Fold foil around potato mixture and seal tightly. Grill, covered, over medium heat for 12-14 minutes or until potatoes are tender and cheese is melted. Carefully remove foil to allow steam to escape. Yield: 2 servings.

Yeah, yeah, I know. We’re not even through August yet. But I’m already pretty stressed, and I need a long walk down a quiet path in the woods, with the leaves crunching under my feet. While I did get a bunch of my Scout responsibilities caught up on, I still have a bunch to do, and 40 hours a week LESS to do it in. Josh’s birthday is bearing down on me like a runaway freight train, and I’m looking at the second week in September like a starving man looks at steak.
And on top of it, I got a teaser of gorgeous 65 and 70 degree weather, and this 85 stuff is slowly driving me mad. I know it’s not time for cool yet, but dangit, it was HERE!! I want it back!
So today, we’re taking a deep calming breath, and going for a nice, slow stroll. Not thinking about any of the responsibilities, just calming down and being for a little bit. And then we’ll dive back in to the deep end. Who’s with me?
- 1 pound medium-small shrimp, peeled and deveined
- 2 Tbsp salt
- 3/4 cup lime juice (juice from 4-6 limes)
- 3/4 cup lemon juice (juice from 2-3 lemons)
- 1 cup finely chopped red onion
- 1 serrano chile, ribs and seeds removed, minced
- 1 cup chopped cilantro
- 1 cucumber, peeled diced into 1/2-inch pieces
- 1 avocado, peeled, seed removed, cut into 1/2-inch chunks
1 In a large pot, bring to a boil 4 quarts of water, salted with 2 Tbsp salt. Add the shrimp and cook for 1 minute to 2 minutes max, depending on size of shrimp. (Over-cooking the shrimp will turn it rubbery.) Remove shrimp with a slotted spoon and place into a bowl of ice water to stop the cooking.
2 Drain the shrimp. Cut each piece of shrimp in half, or into inch-long pieces. Place shrimp in a glass or ceramic bowl. Mix in the lime and lemon juice. Cover and refrigerate for a half hour.
3 Mix in the chopped red onion and serrano chile. Refrigerate an additional half hour.

- 1 unsliced round loaf bread
- 2 cups (8 ounces) Monterey Jack cheese, shredded
- 1 cup (4 ounces) Parmesan cheese, shredded
- 1 cup mayonnaise
- 1/4 cup finely diced onion
- 7 bacon strips, diced and fried
- 1 garlic clove, minced
- 1/4 tsp crushed red chile flakes
Pre-heat oven to 350 degrees.
Slice the top quarter off the loaf of bread and set aside. Carefully hollow out the inside, leaving a 1 inch shell. Cube removed bread and set aside for dipping.
Combine remaining ingredients in a large bow, spoon into bread bowl. Place on an ungreased baking sheet and cover with the reserved top quarter of the loaf to prevent the dip from becoming to brown while baking.
Bake for 45 minutes or until heated through. Serve with bread cubes and crackers.

1 tomato, cut into 1/2-inch-thick slices
2 tsp. extra virgin olive oil
1 lb. lean ground beef
1 Tbsp. dried oregano leaves
4 KRAFT Singles, halved
8 slider buns, split
2 Tbsp. balsamic vinegar
2 Tbsp. fresh lemon juice
24 baby spinach leaves
HEAT grill to medium-high heat.
BRUSH onions and tomatoes with oil. Grill 2 min., turning tomatoes after 1 min. Remove tomatoes from grill. Grill onions 6 min., turning after 3 min. Cool.
MEANWHILE, mix meat and oregano; shape into 8 (1/2-inch-thick) patties. Grill 3 to 5 min. on each side or until done (160ºF), topping with Singles pieces and adding buns to the grill to toast for the last 2 min.
CHOP onions and tomatoes; place in medium bowl. Add vinegar and lemon juice; mix lightly. Spoon onto bottom halves of buns; cover with spinach, burgers and tops of buns.

How was everyone’s week? Good, I hope. Mine was good. Can’t complain! We have a very quiet weekend coming up. Friday night we have a scrimmage game against another Bison team. Great practice for the boys! Saturday, practice and that’s it! Saturday is also Jason’s 36th birthday! Hard to believe (for his mamma too, I’m sure!) that’s he’s 36. He was only 21 when I met him. He doesn’t like making a big fuss about his birthday. We won’t do much out of the ordinary. I think I’ll make him his favorite cake though, pumpkin spice. 🙂
