This cucumber salad recipe is a favorite salad at family gatherings. It’s so light and refreshing and is a great topping to burgers in pita pockets. If eaten that way, it does get messy so grab a few extra napkins.
The combination of the cucumber and onions add that crunchy, succulent flavor to any palate, and is so easy to make. If you like to add more color and flavor, throw in a few halved cherry tomatoes.
Ingredients:
1 medium cucumber, sliced
1 medium onion, sliced
2 teaspoons salt
2 Tablespoons sugar
2 Tablespoons vinegar
1 cup cold water
1/4 teaspoon pepper
Directions:
Mix all ingredients together and chill before serving.

With all the cukes we all have right now I thought I’d put up this oldie but goodie. I read a recipe today for a grilled turkey breast with this on top. I’m having it on Wed. Toby and Sue have cukes coming out of their ears!
my dad always had this as a side dish, we kids did not like it then, now I love it.
I made this for a baseball BBQ and it was good, but I’d never make it again without a slicer. Cutting those cucumbers that thin is a pain in the butt! It tasted good though!
When Sue’s family was here from Kansas City, her uncle used a potato peeler and Toby thought that was the best idea ever and now that’s what we’ve been using too. It works like a charm.
