Ingredients
- 1 egg
- 1 tablespoon water
- 3/4 teaspoon salt, divided
- 1/8 teaspoon pepper
- 1 cup dry bread crumbs
- 4 boneless, skinless chicken breast halves
- 4 tablespoons olive oil, divided
- 5 medium zucchini, sliced
- 4 medium tomatoes, sliced
- 1 cup shredded mozzarella cheese, divided
- 2 teaspoons minced fresh basil
Directions
- In a shallow bowl, beat egg, water, 1/2 teaspoon salt and pepper. Set aside 2 tablespoons bread crumbs. Place the remaining crumbs in a large resealable plastic bag. Dip chicken in egg mixture, then place in bag and shake to coat.
- In a skillet, cook chicken in 2 tablespoons oil for 2-3 minutes on each side or until golden brown; remove and set aside. In the same skillet, saute zucchini in remaining oil until crisp-tender; drain. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
- Sprinkle the reserved bread crumbs over the zucchini. Top with tomato slices; sprinkle with 2/3 cup mozzarella cheese, basil and remaining salt. Top with chicken. Cover and bake at 400 degrees F for 25 minutes. Uncover; sprinkle with remaining cheese. Bake 10 minutes longer or until cheese is melted.

Only thing we needed was zucchini so we picked it up at the Swapper’s Meet this morning and will be having this for supper!

Mine’s been in the oven for 10 minutes. It was kind of putsy to make and messy with the oil and breading. I’m not a fan of eggs and bread crumbs and it took over an hour but if it’s really good, which it looks like it’s going to be, it’ll all be worth it.
We really liked it. I’d do something different with the chicken though. It was hard to cut and eat together because the chicken kept sliding off. I may cut it in chunks or maybe small strips. I also used twice as much cheese. I bought the low fat, skim milk cheese. YUMMY! We also have enough left for another meal. Thanks Nikki. I just love tomatoes hot.
We also liked it. Toby cut the chicken in half to thin it out. (So, he made a top and bottom, not 2 sides. does that make sense?!) I would cut it into strips next time though. The breading was good, but like Joy said, it’s pretty putsy. I would also not cook the zucchini before hand b/c ours ended up pretty soagy and I prefer a little crunch to my veggies. We also added more cheese b/c cheese is yummy 🙂 It was good and the kids liked it so I’m sure we’ll make it again.
Good to know! Now that you, Guinea pigs have tried it, I know what to do when I make it! LOL I’ll also have to do only half tomatoes. I love them hot too!
